Bruschetta with tomato concassé



  • 40 ml EQ Pure Arctic Oil
  • 8 tomatoes
  • 8 slices of salted, dried ham (Norwegian Spekeskinke)
  • Basil
  • 8 slices of a baguette
  • Salt and black pepper
  • ½ lemon
  • 1/4 ts Sugar Fresh herbs of your own choice


To do: Toast the bread in the oven or a frying pan. Fry the ham in a frying pan on medium heat for 30 sec, only on the one side. Boil water. Cut a cross in the top and bottom of the tomatoes and put them into the boiling water. Leave them for approximately 10 seconds then move them over to a bowl with ice water. Peel the skin of the tomatoes, remove the soft inside, and cut them in small pieces. Then mix with lemon juice, sugar, chopped basil, a little bit of salt and black pepper.

In the end, add the oil to the mix. Put the ham on top of the toasted bread, and spread the tomato concassé over. Decorate with fresh herbs.

Great as breakfast, lunch or a snack.
